Hi Cole, you can for a few hours, yes, but the assembled pizzas will continue to rise a bit. Cover them tightly in the refrigerator– that will help.

I’m not bad at making pizza dough but on the Ooni FB page there’s all these formulas for “hydration.” It’s all so complicated. I gave your recipe a try and it’s better than anything I done ini the past and better than anything I’ve tried from the Ooni FB page. They make it so complicated. I get the most compliments when I use your dough recipe

Hi Jess, we find it best to freeze the dough as a ball, since it needs to thaw and rise again before using. It will lose it’s rolled out shape and puff up too much if it’s thawing and rising as a shaped crust.

Hi Stephanie, absolutely! All purpose flour is more readily available for most bakers, but 00 flour is great in this recipe! Use the same amount.
